  • sugar – 150 gr
  • flour – 150 gr
  • dark chocolate – 150 gr
  • 1 egg yolk
  • butter – 125 gr
  • sugar – 0,3 glass
  • cheese – 250 gr
  • cream 9% – 0,5 glass.

How to:

  • Step 1

Break chocolate into pieces, put in a saucepan together with butter and heat on medium heat, until the mixture is smooth. Allow to cool slightly.

  • Step 2

Whip the egg with the sugar, add the melted chocolate and the sifted flour. Put in a padded parchment of rectangular shape and bake in preheated oven at 180° for 10 minutes.

  • Step 3

Beat the cream cheese with sugar, eggs and cream. Put the resulting mass on a chocolate liner and return to oven for 15 minutes. Allow to cool in the oven. Then move to the refrigerator for 3 hours. Cut into squares before serving.

  • cocoa powder – 0,25 glass
  • cream 20% – 250 ml

For dough:

  • butter – 125 gr
  • flour – 1,5 glass
  • sugar – 80 gr
  • ice cool water – 1 tablespoon
  • 3 egg yolks.

How to:

  • Step 1

Prepare the dough. Cool in advance and cut into small pieces. Sift flour, add cocoa, butter and sugar and mix in a food processor until crumbs. Without turning off the processor, add the egg and water. Whip until homogeneity. Shift the dough on the table, form a ball, wrap in foil and place in refrigerator for an hour.

  • Step 2

Roll out the  dough between two sheets of parchment into a thin layer. Lay out in a circular shape with low sides, use a rolling pin to remove the excess dough. Return to the fridge for 30 minutes.

  • Step 3

Lay the dough on a sheet of parchment, put the beans on top and place in preheated oven at 180° for 15 min. Remove the beans and the parchment. Return to the oven for another 10 minutes.



  • Step 4

Prepare the ganache. Break chocolate into small pieces, put in a fireproof dish and put in the pan with boiling water. Reduce the heat to minimum.

  • Step 5

Add the cream into a chocolate and cook, stirring from time to time, to homogeneity. Remove from heat and let stand for 10 min.

  • Step 6

Pour ganache on the dough and level the surface. Cover and put in refrigerator for 2 hours.

  • cream 36% – 200 ml
  • chocolate (70% cocoa) – 250 gr
  • sugar – 3 tablespoons
  • milk – 250 ml.

How to:

  • Step 1

Pour the milk and cream into a saucepan, add the vanilla, and slowly bring to a boil. Whip the egg yolks with sugar, add a little bit of hot milk mixture, stir and pour the egg mixture into the saucepan, stirring with a whisk. Cook until thickened, not letting it boil.

  • Step 2

Add 180 g of melted chocolate, cocoa powder and rub through a sieve. Pour the mixture into an ice cream machine for 25-45 minutes. When ice cream is almost ready, open the lid and, without shutting down the engine, add the remaining melted chocolate.

  • Step 3

Freeze until ready. Serve with chocolate pralines.
