    1. Add mushrooms and pepper 3 min before mushrooms are cooked.
    1. Stew for 5 more min.
    1. Mix eggs with mushrooms and vegetables in a frying pot.

    • 250 g of cherry tomatoes
    • ½ lemon
    • olive oil
    • 4 leaves of fresh basil
    • 400 g of baked beans (1 jar)

    • 2 eggs

    • 2 tsp of ricotta cheese
  • balsamic or chilli sauce

Directions

    1. Cut tomatoes into halves and sprinkle with lemon juice.
    1. Add 1 tbsp of olive oil and basil leaves. Mix and put aside for a couple of minutes.
    1. Heat a frying pan. Put beans and fennel inside, add a pinch of black ground pepper. Cook for 5 min, mixing all the time.
    1. Add tomatoes and pour in 100 ml of water. Boil for a couple of minutes until water dissolves.
    1. Break and pour in two eggs. Cover and cook for 3 min.
    1. Prepare ricotta toasts.
  1. Sprinkle eggs with sauce and serve.

Egg & berry sandwich

    • 2 eggs
    • 1 ripe banana
    • ground nutmeg
    • ground cinnamon
    • 2 slices of wholemeal bread
    • 150 g of strawberry
    • olive oil
    • 20 g of shelled pistache
    • 4 tbsp of fat-free yogurt
  • honey

Directions

    1. Whisk an egg and peeled banana. Add cinnamon and nutmeg. Mix well and pour on a plate.
    1. Make a pocket in bread slices by taking out soft parts of bread.
    1. Put some strawberries inside and pour in banana-egg mixture.
    1. Pour the remaining mixture on a pre-heated frying pan. Place the slices on top.
    1. Cool a couple of minutes on each side.
  1. Cover with yogurt, honey and pistache.
