Today we offer 5 receipts. Mayonnaise, ketchup, aromatized salt, quick pizza sauce and home tomato paste which you will easily cook at home.

Home-maid mayonnaise

Ingredients:

  • 2 egg yolks;
  • 1 teaspoon of lemon juice or vinegar;
  • ½ teaspoon of salt;
  • ½ teaspoon of dry mustard (at will);
  • 1 glass of sunflower, olive or any other oil.

Directions:

Put egg yolks, lemon juice, salt and mustard into the bowl and blend them several times for breaking the yolks. Then start adding ½ glass of sunflower oil, blending your mixture after each adding. After that continue adding the rest of oil in amount of 1 tablespoon. Before adding the next oil portion make sure your mixture is completely homogeneous. Your mayonnaise will become denser and will get a bright shade.

After that add the rest half of the oil. The more oil you will add, the denser your mayonnaise will become. Add oil until you like the density.

Home-cooked ketchup

Ingredients:

  • 1 tablespoon of olive oil;
  • 3 grinded cloves of garlic;
  • ½ cut yellow onion;
  • 1,8 ripe cut tomatoes (free of skin and seeds);
  • ½ glass of apple vinegar (or white or red wine vinegar)
  • 2 teaspoon of salt;
  • 1 + ½ teaspoon of ground black pepper;
  • ¼ teaspoon of ground pimento;
  • ¼ teaspoon of ground cayenne pepper;
  • ¼ teaspoon of ground ginger;
  • ½ glass of dark-brown sugar;
  • 1 tablespoon of honey.

Directions:

Heat the olive oil in the thick pan and passer the onion for nearly 3 minutes or until it becomes semi-transparent. Then add garlic and passer the mixture for another minute. Add tomatoes, vinegar, salt, all spices, ginger and stew for 20 minutes: in the end your tomatoes should easily fall to pieces.

Put the pan away from fire and with the help of blender puree the mixture: you can do it part by part in order not to leave large pieces. Then add sugar and honey and again put on fire. Stew your ketchup for 20-30 minutes. Taste your mixture and add the spices and herbs which you want.

Grate your ketchup on the sieve for more homogenous mixture, fill the jars with the mixture, cool it and put into the fridge. The expiration date of your home-maid ketchup is 14 days.

Aromatized salt

Ingredients:
Take a common salt and spices in the following proportion: 1 teaspoon of spices to ¼ glass of salt. Spices: dried herbs, chili pepper, dried citric skins, tea, dry garlic, onion or tomatoes. All the ingredients have to be dry and grinded or cut into small pieces!

Directions:

Dry all the ingredients you need in the oven or microwave oven. Then ground them and try mixing. Start from 1 teaspoon of aromatizers and ¼ glass of salt. Mix them thoroughly with your hands, mix in the mortar or grind in the coffee-grinder or in the kitchen machine. Taste it and add some more aromatizers or salt depending on your taste.

Quick pizza sauce

Ingredients:

  • 450 ml of cut or whole tomatoes;
  • 2 cut cloves of garlic;
  • 1 teaspoon of balsamic vinegar;
  • 1–2 tablespoon of olive oil;
  • several leaves of fresh basil (optional);
  • salt and fresh-ground black pepper (to your taste).

Directions:

Put all the ingredients in the kitchen unit and blend until the homogenous mixture. Keep in the fridge or freeze. You can do it in the small packets dividing your sauce into several portions.

Home-maid tomato paste

Ingredients:

  • 4 + ½ kg of tomatoes;
  • 2 tablespoon of olive oil;
  • 2 teaspoon of sea salt;
  • ½ teaspoon of citric acid.

Directions:

Heat the oven to 190°C. Cut the tomatoes into four parts. Heat the pan with olive oil and send there your tomatoes. Stew the mixture until the skins start separating from its pulp. In order to separate the skins form the seeds pass the tomato through a special grinder or a sieve. Add some salt and citric acid into your tomato pulp, mix thoroughly, put on the baking tray covered with baking paper and send into the heated oven. Cook in the oven for 3-4 hours until the paste-like mixture. Put the mixture in the jars and keep in the fridge or preserve.
