Puff puff is a traditional Nigerian dessert, that is basically a dough, fried in oil. It sounds very simple, and yet there are dozens of puff puff recipes, and each is at least slightly different than another. 1. How to make puff puffs
Let’s look at the basic recipe to easily learn how to make Nigerian buns. The ingredients you’re going to need to make about 20 balls are:
- 250 g of flour
- 2 tsp of yeast
- ½ tsp of ground nutmeg
- Sugar (at your taste, at least ½ tsp)
- Salt (a few pinches)
- 1.5 cups of warm water
- Vegetable oil (for frying)
Here are the directions you need to follow:
1) If you got yeast in a form of powder, mix it in a bowl with flour, nutmeg, salt and sugar. If not, mix it with water and add it to the mix in the next step.
2) Gradually, add water to the mix in small quantities. While doing so, mix everything carefully, preferably by hand or whisk. You’re going to get a batter for your puff puff. Make sure it’s not too watery, or you’ll have bad time trying to shape it into the balls they’re supposed to be.
3) Cover the bowl with aluminum foil or food film and leave it for about an hour.
4) Pour oil into a deep pot, so it is at least 5 cm deep. Heat it up till it’s about 350°C.
5) Whip the batter to get rid of the air bubbles. Form a ball with it and carefully place it in the oil. It should rise to the surface almost immediately.
6) Fry it for about 3 minutes, until its surface is brown. Flip it to the other side and wait about the same amount of time. When it’s ready, get it with a spoon or ladle and dry with paper towels to remove excessive oil. Now you know how to make puffpuffs!
2. How to make puff puff without yeast
If you’re not a fan of feasted baking, then this recipe is just for you! The ingredients for puff puff without yeast include:
- 250 g of self-rising flour
- ½ tsp of nutmeg
- 1 cup of sparkling water (any kind), ½ cup of warm water
- 1 or 2 eggs
- Sugar (at your taste), salt
- Oil for frying
The process of making the dessert is basically the same, only you’ll need to wait a bit longer for a batter to rise up (about 2.5 hours). Serve the balls, sprinkled or dipped in the mix of cinnamon and sugar.
3. Puff puff recipe with milk
Adding milk to the recipe will make the puff puffs more gentle and soft. To make this variation, you’ll need:
- 250 g of flour
- 2 tsp of yeast
- ½ tsp of ground nutmeg
- 1 or 2 eggs (optional)
- Sugar (at your taste), salt
- 1 cup of warm milk, ½ cup of warm water
- Oil for frying
The only difference in this recipe is that you’re going to mix the butter not on water, but on the mix of water, milk and egg. Egg can make it thicker, in this case add some more milk to the mix.
4. How to make puff puff with pepper
If you want to try more original and exotic desert, or you just want to make the puff puffs as an addition to your main course, try this recipe for hot puff puffs. To make them, you’ll need
- 250 g of flour
- 2 tsp of yeast
- ½ tsp of cinnamon
- 1 or 2 eggs (optional)
- 1.5 cups of warm water
- Sugar (at your taste), salt, blended pepper
- Medium-size onion
- Oil for frying.
The recipe for butter is the same, as in previous cases, except you’ll need to add pepper to the mix. When the oil is hot enough, put an onion in it, it will give a subtle taste to your puff puff balls. You can add a bit of pepper on the outside after the dish is done too, if you really like hot stuff.
