Nigerian soups are an essential part of the cuisine. As they are commonly served with mostly blend-tasting Fufu, soups are responsible for the taste of the whole meal.

1. Ogbono soup
- Assorted Meat and Fish: Beef, Shaki (cow tripe), Dry Fish, Stockfish.
- 2 handfuls Ogbono Seeds.
- 3 cooking spoons red palm oil.
- Vegetable: Frozen Spinach (you can also use Pumpkin leaves or even Bitterleaf)
- 1 handful crayfish.
- Pepper and Salt (To taste)
- 1 medium onion.
- 2 stock cubes (Maggi/Knorr)
Ogbono, also known as bush mango or wild African mango, is famous for its protein and fat-rich seeds.
They are used for this dense and rich soup. To make it, you’ll need 10-15 Ogbono seeds, spinach, onion, some meat and fish (beef, dried or stock fish), a few table spoons of palm oil, salt and pepper.
Grind the Ogbono, melt the palm oil and add the nut to it, cook until dissolved. Add meat and/or fish to the mix, after few minutes add some hot water, salt and pepper. Cook for 20 minutes, stir regularly. Add vegetables in the end, cook them for 3-5 minutes.

2. Okra soup
Ingredients for Okra soup
250g Okra
3 cooking spoons red palm oil
Beef: Best cut
Shaki (Cow Tripe) (Optional)
Fish: Iced Fish (Mackerel/Titus), Dry Fish, Stock Fish
1 handful crayfish
Pepper and Salt (to taste)
Onions (optional)
Vegetable: Nigerian pumpkin leaves or spinach (fresh or frozen)
3 stock cubes
This one is really easy to make and you can make it just before the dinner. You’ll need okra (about 200 grams), a few table spoons of palm oil, spinach or pumpkin leaves, onions, beef or some fish. Cut the okra and pumpkin leaves into small pieces, the smaller the better.
Boil your meat or fish with onion and vegetables in a moderate amount of water. Fry okra with pumpkin leaves for about 5 minutes, then add meat, salt and pepper. Stir regularly and cook until ready.

3. Banga soup
- 1 kg Palm Fruits or 800g tinned Palm Fruit Concentrate.
- Beef.
- Dry Fish.
- Vegetable: Scent Leaves for Ofe Akwu or dried and crushed bitterleaves for Delta-style Banga Soup.
- 2 medium onions.
- 2 tablespoons ground crayfish.
- Salt and Chilli Pepper (to taste)
- Ogiri Okpei (Iru)
Banga soup, originated on the southern part of the country, is a tasty addition to the soup collection. To make it, you will need 700 grams of palm fruit concentrate, dried fish (you can make it with beef, but it wouldn’t really be the same), dried bitterleaf, Iru, onions, salt and pepper.
Boil the palm fruit concentrate until you see a red oil on its surface. Then add fish, salt, pepper, onions and leave to boil. Grind together Iru, bitterleaf and pepper. Add them at the end, cook for 2-5 minutes more.

4. Egusi soup
Ingredients for Egusi Soup
200 g of Egusi seed,
400 g of beef,
50 g of cooked and boned stock fish pieces,
3 Tbsp. (45ml) of ground dried crayfish,
1 small bunch of Ugwu or bitter leaves,
50 ml of palm oil,
2 Knorr Stock Cubes,
1 small onions,
4 large fresh tomatoes,
1 tsp (5ml) ground chilli powder.
Egusi soup is one of the most popular ones, but there are a lot of different variations of this recipe. Here’s one of the options you can use. You’ll need half a kilo of Egusi seeds, beef or fish, pumpkin leaves, spinach or bitter leaf, palm oil, salt and pepper.
Boil the meat or fish in 1 liter of water, then remove it and add grinded egusi to the broth. Add some water and stir from time to time, until you see the clear oil, coming from egusi to the surface.
After that, add palm oil and chopped leaves, salt and pepper and cook for about 10 minutes. In the end, add the cooked meat or fish. Leave for a few minutes before serving.

5. Pepper soup
Ingredients for Pepper Soup
1kg Chicken or Cow Foot or Assorted Beef
4 seeds Ehu or Ariwo or Calabash Nutmeg
Chilli Pepper (to taste)
2 teaspoons crushed Dry Uziza (optional)
2 medium onions
Salt (to taste)
3 stock cubes
1 teaspoon of Thyme (for chicken pepper soup)
This soup has a lot of variations too, you can really add anything you like to make it more original and special. To make the basic version, you’ll need chicken or beef, some Ehu or Calabash Nutmeg, chili pepper, dry Uziza, thyme and salt.
Boil the chicken or beef with onions and thyme, adding some water regularly. Fry the Ehu seeds, until you feel a distinct aroma. Peel them and grind with Uziza. Add them and chili pepper with salt to the meat, when it’s done.
Boil for five more minutes and it’s ready to be served. Tastes great with white rice and chilled drink.
